Must-See / Big Items

Priority list. The museum is three floors; plan ~2 hours general admission, +1 hr if doing Make-A-Soda. Don't blow through the first floor in 20 minutes β€” the bottling-line and artesian-well story is the densest content in the building.

  1. The Artesian Manufacturing & Bottling Co. building itself (1906) β€” the headline artifact, not just the container. Romanesque-revival brick designed by local Waco architect Milton W. Scott (in partnership with Glenn Allen); round-arch fenestration with prominent voussoirs in the H. H. Richardson style that swept American institutional architecture at the turn of the 20th century. 18-inch-thick brick walls on a heavy timber foundation; tile roof. Survived the May 11, 1953 Waco F5 tornado (114 dead β€” one of the deadliest single tornadoes in US history) with damage limited to the Mary Street side; the lighter-colored repair bricks are still visible on that elevation. Walk around the outside before going in, and find the patched bricks. National Register of Historic Places (#83003152). The museum opened May 11, 1991 β€” exactly 38 years after the tornado, deliberately.
  2. The artesian well on the first floor β€” the whole reason the building exists. "Artesian Manufacturing & Bottling" wasn't branding; it was operational. Waco sat above an artesian aquifer (water under enough natural pressure to rise without a pump), and the building drew water directly from a well in the basement for bottling. The well is preserved and visible. Object lesson in why early bottlers built where they did β€” water sourcing was the constraint that pinned the industry to specific cities.
  3. The first-floor bottling line and period equipment β€” original 1906-era bottling machinery, syrup-mixing equipment, returnable glass-bottle production, horse-drawn delivery wagons. The second floor of the building was originally where syrups were mixed for Dr Pepper, Circle A Ginger Ale, and the other soft drinks the company also made. This is the working primary source for "how was a soft drink actually manufactured before continuous-flow industrial automation?" β€” slow, batch-process, hand-labeled, glass-bottled, locally distributed.
  4. The Charles Alderton / Wade Morrison invention story β€” Alderton was a 27-year-old pharmacist at Morrison's Old Corner Drug Store in 1885; he was obsessed with the way the drugstore smelled β€” all the fruit-syrup flavors mixed in the air β€” and tried to replicate that "fruit-stand-in-a-glass" effect in a drink. Customers ordered it by asking him to "shoot me a Waco." Morrison (the owner) named it Dr Pepper, dropped the period in the 1950s, and the origin of the name is still genuinely unknown β€” the museum has collected over a dozen competing origin stories. Read all of them. Alderton himself didn't pursue commercialization; he gave the formula to Morrison and went back to pharmacy. Morrison and Robert S. Lazenby formed the Artesian Manufacturing & Bottling Company in 1891, which became the Dr Pepper Company.
  5. The Keurig Dr Pepper Liquid Lab + the Make-A-Soda experience β€” the museum's modern hands-on wing. The Liquid Lab demos (free with admission) walk through the soft-drink-as-chemistry angle: carbonation, sweeteners, flavor extracts, acidulants, the role of phosphoric acid. The Make-A-Soda ticketed experience ($35+) gives you a base soda (Dr Pepper, Diet Dr Pepper, 7 Up, or Big Red) and a flavor library β€” simple and "artisan" β€” to build and bottle your own formula. Worth the upcharge. Maxine designs and bottles a formula, names it, and you take it home. This is the closest thing the museum has to an actual lab bench.
  6. The Waco Lunch Counter civil rights exhibit (permanent) β€” a recently added permanent exhibit on the Civil Rights-era integration of Waco lunch counters. Doesn't try to be the main story, but pulls the building's "soda fountain" function into 20th-century social history rather than letting it stay decorative. Don't skip it because it's small.
  7. The third-floor Free Enterprise Institute & W. W. "Foots" Clements gallery β€” exhibit on the longtime Dr Pepper CEO and on the business side of beverage capitalism: brand-building, distribution networks, bottler franchising, the Dr Pepper-vs.-Coca-Cola lawsuit history (Dr Pepper successfully defended in court in 1963 that it was not a cola, which mattered for bottlers' contracts). The Free Enterprise Institute itself is a school-program brand, but the gallery is worth a slow read for the business-history angle. There's also a jingle theater on this floor.
  8. The advertising / branding wing β€” Dr Pepper's logo, slogans, and ad campaigns are unusually well-preserved across 140 years: "King of Beverages," "10-2-4" (drink it at 10, 2, and 4 β€” the company's 1920s "energy lull" pseudo-science), the 1970s "I'm a Pepper" Bobby Hookway campaign, the David Naughton TV spots, the modern Lil Sweet character. Lays out brand evolution as a near-perfect case study of American advertising's century-long shift from quasi-medical claims β†’ lifestyle aspiration β†’ ironic celebrity-spokes-character.
  9. The working soda fountain β€” at the back of the first floor. Get a hand-mixed Dr Pepper or a Dr Pepper float. The mechanics are visible: carbonated water on tap, flavored syrup pumped from a labeled crock, mixed in the glass. This is what an 1885 drugstore soda fountain actually did, and it's directly downstream of the bench Charles Alderton mixed the original on. Compare to a modern fountain dispenser (premixed, refrigerated, push-button).
  10. The 23-foot-tall "World's Largest Dr Pepper Bottle" β€” a 2025 installation for the museum's 35th-anniversary "birthday bash" (verify ~2026-05; it's likely still installed). Photogenic, but the more interesting object lesson is the brand's deliberate insistence on the "23 flavors" number, which is itself a trade-secret marketing artifact β€” the actual formula has never been published, and only a handful of people at the company reportedly know it in full.

Stretch goals (do if time allows):

  • Walk to the Old Corner Drug Store site (the original 1885 invention location): the actual building no longer stands, but the site (corner of 4th and Austin Avenue, ~5 blocks NE of the museum) has a Texas Historical Marker. Trace the 5-block walk from invention site to first dedicated bottling plant β€” the whole pipeline within a few hundred yards.
  • Read the dozen-plus name-origin stories posted in the museum and pick the one Maxine finds most plausible; argue for it.
  • Compare to a Coca-Cola or Big Red label. Bring an actual modern Dr Pepper can/bottle and read the ingredient list in the museum next to the historical formula displays.

What is phosphoric acid contributing to the taste, and why is it (not citric acid) used in colas and Dr Pepper specifically β€” what's the pH? How does carbonation work β€” what's the equilibrium between dissolved COβ‚‚ and bubbles, and why does the drink go flat? What does "23 flavors" actually mean chemically β€” are these 23 discrete molecules, 23 plant extracts, or 23 proprietary blends? Why has the recipe never been reverse-engineered if mass spectrometry can identify trace compounds at parts-per-billion? (Hint: it has been, partially β€” read on this.) Compare cane-sugar Dr Pepper (the "Dublin Dr Pepper" recipe, made in Dublin, TX until the 2012 lawsuit shutdown) with high-fructose-corn-syrup Dr Pepper. What does the substitution actually change?
  • Business / Law: What's the difference between a patent and a trade secret as ways to protect a formula? Why did the Coca-Cola Company, Dr Pepper Company, and KFC all choose trade secret over patent? What's the trade-off (patents are public + time-limited; trade secrets are private + unlimited but vulnerable to reverse-engineering and independent reinvention)? Look up the 1963 lawsuit in which Dr Pepper successfully argued in court that it is not a cola β€” why did the company sue itself into that question, and what did winning unlock for its bottlers?   • Art / Architecture: The Artesian Manufacturing & Bottling Co. Building is a Romanesque-revival design β€” what does that mean structurally and visually, what defines the H. H. Richardson influence (round arches, voussoirs, heavy stone or brick masonry, asymmetrical massing), and how does it compare to other Texas buildings of the same era? Sketch the round-arch window pattern on the front elevation. Why did an industrial building in 1906 Texas adopt an architectural language that started in 12th-century French churches?
  • Math / Engineering: The artesian well draws water from below by hydraulic pressure with no pump. Why does that work β€” what's the geology, what's the pressure source? How does bottling-line throughput math work β€” if a single 1906-era manual bottler could fill 100 bottles per hour and a single 2025-era automated line fills 2,000 bottles per minute, what's the per-bottle labor cost ratio and how did that economic shift change consumer-product pricing?
  • Writing: Pick three of the museum's dozen-plus origin stories for the name "Dr Pepper" β€” there's the rumored Virginia pharmacist Dr. Charles Pepper whose daughter Wade Morrison loved, there's the bottler's-friend story, the "give it a medical-sounding name" story, the Pepper-is-the-spice story. Write a 500-word case for the one you find most plausible, using the historical evidence available.   • Photograph the exterior of the AMBC building from the corner of 5th and Mary, then walk around to the Mary Street side and photograph the patched lighter-brick repair where the 1953 tornado damaged the wall. Note in writing how you'd recognize the patched section.
  • On the first floor, photograph the artesian well and write down what an artesian well is (water under natural pressure from a confined aquifer) and why it mattered to a 1906 soft-drink bottler.
  • Sketch (or photograph and later annotate) the 1906-era bottling-line equipment. Identify and label at least three pieces of machinery β€” bottle filler, syrup mixer, capper, conveyor, washer β€” by what they did.
  • Count and photograph at least 6 of the dozen-plus name-origin stories posted in the museum for "Dr Pepper." Pick one and note in writing why you think it's most plausible.
  • At the working soda fountain: get one hand-mixed Dr Pepper. Photograph the mixing process β€” the syrup pump, the carbonated water spout, the glass. Compare in writing to how a modern push-button fountain dispenser at a restaurant works.
  • If doing Make-A-Soda: photograph your bottle and write down your recipe (which base, which flavors at what proportions, what you named it). Keep the bottle for the home record.
  • On the advertising-history wall, identify and photograph at least four distinct Dr Pepper logo eras by decade. Note what changes β€” typography, color, the period after "Dr." disappearing in the 1950s.
  • Read the Waco Lunch Counter civil rights exhibit. Note in writing one fact you didn't know about Waco's mid-20th-c. civil rights history.
  • On the way out, find the Texas Historical Marker for the Home of Dr Pepper on the exterior β€” photograph and transcribe one line that you didn't already know.

Designed as a Waco day trip β€” Dr Pepper Museum in the morning + Texas Ranger Museum or another Waco stop in the afternoon. Leave SW Austin early enough to be at the museum at 10am opening.
